If I’m low on time this recipe for chewy cookies always works (and you can adapt it to make then wintery by adding ginger and cinnamon) 125g unsalted butter, 100g caster sugar, 75g muscavado sugar, 150g plain flour, 1/2 teaspoong baking soda, 1 egg, spices/vanilla. Melt the butter and add to sugars. Add egg and vanilla/spice. Combine sifted flour and baking powder. Mixture will be wet. Line a baking tin with greaseproof paper and dot mixture on (I have to do it in 2 batches) bake for 8 minutes on gas mark 5, or until the bottoms look tanned. Sont leave too long as they burn. Take themn out and they’ll still look a bit wobbly but leave them to cool and they firm up with a deliciously chewyness to them. Dust with icing sugar or ice them. I think they’re delicious.
